I think Tesco now have some curry sauces, not been able to get hold of it in a long time, but curry paste is very easy to make and stores well. just the basics, but you will need fresh ginger ,garlic, dried chilies, tumaric, curry leaves (or powder ), garam masala (cumin, coriander, cinnamon, nutmeg ,black pepper), a mix of mustard seeds, fennel seeds , and coriander seeds and fennekgeek. nigella seeds oh paprika powder too. that's the basics, depending on what curry you want to do you will need chicken stock ,onions , cream, yogurt, coconut milk , tomatoes, tomato paste and fresh coriander leaves , a bit of sugar to balance out the bitter tomato paste, some oil and a bit of salt. easy stuff.
oh that's just one curry , and there are quite a few curries to do

just woke up with a hangover, but I didn't drink yesterday or the day before , how does that work ? the ladies worked hard yesterday getting 150 tortillas done ( thank god it wasn't me having to roll them out), and now we can get on with fresh sausage rolls today, and I got an urge to make Jamaican style patties as I've not had one in years ,out comes the allspice, and hot sauce baby. mrs Daily from the coconut grove back in Peterborough used to make the best patties, can of red stripe and off upstairs to hang with the Rasta's in a very dark Smokey room with king tubby playing man , yah man dem de good days.

life is sometimes a mystery, the wife and daughter arranged to sell some pie's at the OTOP thing in town..... well pull my pants down and call me Miriam . they took 60 meat pie's, odd flavors like tom yung gung, panang curry ***** . well anyway I went to see how the were getting on...wow half a dozen pies left :) . here's the good part. thais were asking for sweet stuff, and there's always a bad side...and that is....getting up at 5.30 am to make apple pies, pineapple pie's, mango pies. but while I'm waiting for the girls to put the pie's together, I thought I would make a few muffins too.. why not. so keeping with the thai theme I decided mango muffins , plus ginger and black pepper cakes . hey their thai , I did resist putting chilli in the cake. you never can tell though they would probably love chilli cakes.

well last day of OTOP in town, mad week that just got busier and busier. a very impressive week and an absolute must for anyone with things to sell, girls working round the clock to keep up, should have figures for it in a couple of days, the guy opposite our stall was selling imported beer, talk about busy, said he had sold over 3,500 cases of beer in a week ** , us I'm guessing at maybe we have sold more in 5 days than we have in 3 months, checking stock this morning, I have used over 80 kg of puff pastry, and about 70 kg of bread flour in 5 days. good learning curve for the thai market, they like mini loaves of bread, whole wheat we cant make fast enough, and bloody cup cakes and turnovers tray after tray after tray. in reality it's a trade fair, and a bloody good one. next time will be even better as I will know about it before hand rather than on the morning it starts. I suggest anyone who has something to sell gives it a go. it has created a whole new market for me with dozens of coffee shops asking for supplies of rolls and cakes.....happy days as they say.
now back to the real world....it's sunday time for a nice lunch me thinks, and got to do it all myself this week
chunky vegetable soup with fresh bread
roast chicken or pork tenderloin with mixed veg, roast potatoes and Yorkshire pudding
and fruit trifle .
