The wife is making khao soi this evening, another of my favorites.

Example of khao soi. (Mine is not quite ready yet).

It can be chicken, or pork or beef. It is a northern Thailand dish (Chiang Mai area) that has ba-mee (soft egg noodles) coconut milk, meat, spices and served with mee-krob (crispy fried noodles).

Here is a link to a restaurant that serves it here in Udon Thani. It is on Srisuk road before you get to Two Hearts Italian restaurant, headed west. We eat there occasionally, but home-made is best!
